There is a Nigerian expression that says ‘The way to a man’s heart it’s his stomach’ also ‘She who has the soup holds the man’ which is why soup has been an important meal for Nigerians. Ofe okazi is a soup to the eastern part of Nigeria. It is usually prepared with fresh okazi leaves, Uziza leaves and the proteins (meat/beef) are mostly cooled before combining the other ingredients. Ofe okazi is similar to ofe Owerri the main difference is that ofe Owerri is thickened with Cocoyam while okazi is thickened with Achi,ukpo, or ofo.

STEPS ON HOW TO PREPARE OFE OKAZI

INGREDIENT

  • Stockfish
  • Dried or smoked fish
  • Okazi leaves
  • Meat
  • Uziza leaves
  • Achi or ofo powder
  • Grounded Crayfish
  • Palm oil
  • Seasoning cubes and salt
  • Cameroon pepper, habanero pepper.

COOKING STEPS;

  • Clean the cooking environment, wash all cooking utensils properly, arrange the ingredients, and put on your apron.
  • Soak the dried fish in hot water for 2 minutes, drain and rinse well with cold water.
  • Wash meat and stockfish properly, put in a pot of water, add seasoning cubes and salt then allow to boil.
  • Add the pomo, dried fish and more water then cook for 5 minutes until tender.
  • Add the peppers, crayfish, Palmoil, seasoning cubes, and salt. Then cook for 10 minutes.
  • Add achi or ofo, stir for like 3 minutes till whatever lumps that firms dissolve, and cook till soup becomes homogeneous.
  • Add okazi and uziza leaves and stir properly. Cook for 5 minutes.
  • Your OFE OKAZI is ready, serve with any swallow of your choice.
